You can get them long or short, smooth or ribbed, natural colored or in red, green, purple or black. I’m talking about the ultimate comfort food: pasta. I see pasta as a fast food because it can be quick to cook and the best sauces are uncomplicated and also speedy to make. But the science of the best fresh pasta lies in the Spaghetteria Laboratorio in Amsterdam.
At Spaghetteria, all pasta is home-made with the most respect for the Italian kitchen and principles. Five years ago they made all the pasta by hand and cutting the pasta sometimes took up to ten hours a day to complete. That’s why you’ll never get a knife at Spaghetteria when you order your fresh pasta. Like the chief cook Stefano Cavallari says:
‘If you cut the pasta and it breaks, you break my heart.’
With 10 other food bloggers we went over the laboratorio to see with our own eyes how their heavenly pasta is made. For their pasta they use egg-bases dough and as you can see on the pictures Spaghetteria doesn’t have to made the pasta only by hand anymore. They now have four machines that will help them to create the various pastas.
But even with the machines, it still stays a very delicate work. The three pasta-masters have to make sure the pastas get the right size and thickness.
At the laboratorio the masters like to play with some color. Using squid ink to color the fresh egg pasta black and color them red by using red beets. Genuine Italian basil will get the pasta green, but purple carrot is also among the options. Nevertheless, it isn’t only the beautiful color that gives that extra twist but these ingredients also contribute to the flavor of the pasta.
After seeing the pasta-masters at work in the laboratorio, we went to Spaghetteria-Oost where their cooks used the fresh pasta to made us four delicious dishes!
