This Snickers cake is just right for all lovers of nutty chocolate bars. The combination of peanut butter cream, caramel sauce and dark chocolate is simply irresistible. And the best of this Snickers cake is that it’s completely without refined sugar plus it is 100% vegan. The recipe is created by talented Ronja (miss_gruenkern on Instagram).
Of course, the Snickers pie is still a small calorie bomb, but using xylitol has saved us a few calories and carbohydrates.

for the cake bottom:
180 g spelled flour
90 g of corn starch
45 g organic raw cocoa
90 g xylitol
1 tbsp baking powder
135 g organic coconut oil melted
1 tablespoon of apple cider vinegar
90 ml almond milk, room temperature
180 ml of water with, room temperature carbonic acid
for the buttercream:
150 g vegan margarine
300 g xylitol
40 ml almond milk
80 g peanut butter
(for the caramel sauce)
100 g of dates
20 g peanut butter
20 ml almond milk
(for the toppings)
60 g dark chocolate
1 handful of roasted peanuts
Here is how it’s done
The cake bottom:
Preheat the oven to 180 ° C circulating air.
Lay the bottom of a springform pan (20cm diameter) with baking paper (do not grease!).
Sift dry ingredients into a bowl.
Add liquid ingredients, except for the water, and mix.
Finally, add the water and stir in briefly.
Fill the dough directly into the springform pan.
Approximately Bake for 30-40 minutes until the stick sample no longer sticks from the sticks.
Allow the soil to cool for 5 minutes and then tumble directly onto a clean tea towel and allow to cool completely. Do not move or touch as much as possible.
Halve the cooled bottom horizontally to create two equal-sized soils.
The butter cream:
Process the xylitol to powder in a blender.
Turn on the margarine.
Add the remaining ingredients and continue whipping until a firm cream has formed. Keep them cool for at least 30 minutes.
The caramel sauce:
Soak the dates in hot water for at least one hour or in cold water overnight. Then drain off the water.
Mix the soaked dates with the remaining ingredients.
Spread the first pie base with a little caramel sauce and then distribute about 1/3 of the butter cream evenly.
Then put the second soil on top and also sprinkle with the sauce. Spread the cake with the remaining buttercream around and on top and decorate with the caramel sauce, melted chocolate and peanuts.
